The grapes for this sparkling wine are harvested at ideal ripeness in small boxes and gently pressed as whole clusters, using only the first, freshest juice for the base wine. After a few months of barrel aging, it is bottled for the second fermentation and rests on its lees, which contribute to its delicate flavor, until it is hand-riddled for disgorgement after 2 to 3 years.
Vinification: Whole cluster pressing, bottle fermentation Méthode Traditionnelle.
Description: Noble, fresh and delicately spicy citrus notes underpinned with grapefruit, elegant on the palate, cookie and apple slices with subtle fruit and inviting animation.
